INGREDIENTS
LAMB
lamb shank – 1 piece (300g)
garlic – 1 large clove
half lemon juice
dried rosemary – flat teaspoon
spicy mustard – 1 flat teaspoon
honey – 1 flat teaspoon
salt
pepper
FRIES
sweet potato – 1 piece (400g)
purple potatoes – 2 pcs. (400g)
rapeseed oil – a few spoons
chili – 1 tsp
parsley, dried – 1 tbsp
MINT SAUCE
mayonnaise – 2 tbsp
parsley, dried – 1 tbsp
yogurt – 2 tbsp
mint – a handful
lemon juice – a few drops
PREPARATION
1. LAMB MARINADE (1 min)
Mix lemon juice, dried rosemary, mustard, honey, crushed garlic and salt and pepper.
2. MARINATING (5 min + kilka h)
Wash the shin, dry with a paper towel, puncture in several places. Cover with marinade and leave in the fridge for a few hours. Remove from refrigerator for 30 min before baking.
3. MEAT PRE-FRYING (4 min)
Remove the shank from the marinade and fry for one minute on each side (also on the sides) on a very strong fire in the pan.
4. MEAT BAKING (1,5h)
Transfer shank to a roasting dish, pour the rest of the marinade, add 50 ml of water and place in a preheated oven set at 160 C degrees. Bake covered until soft for 1.5 hours – pour over the baking juices from time to time, if necessary add some water. After baking, remove from the oven and let rest for 15 minutes before serving.
5. SWEET POTATO FRIES (5 min)
Peel the sweet potatoes, wash, dry with a paper towel, cut into thick sticks. Coat in rapeseed oil, chili and salt.
6. PURPLE POTATO FRIES (15 min)
Peel, wash and dry the potatoes with a paper towel. Put for 5 minutes in boiling water with a little salt. Pull out, let water evaporate a little and cut into thick fries. Coat in rapeseed oil, granulated garlic, dried parsley and salt.
7. FRIES BAKING (30 min)
Place a baking sheet on baking paper and spread two types of fries evenly on it. Bake until tender and brown for about 30 minutes at 160 C degrees (best to add them to the same oven, aling with the lamb).
8. MINT SAUCE (5 min)
Mix mayonnaise with yogurt, add lemon juice, chopped mint, pepper and salt.
SERVING
Serve lamb hot, straight from the oven, with sauce and fries. Thanks to such a meal you will definitely gather strength to overcome next levels!
