Roasted carrot & beet hummus – Spyro Reignited Trilogy

Spyro colors are a great inspiration to create a variety of dishes that can be eaten „with your eyes” – purple and orange contrast well with each other and look amazing in the pictures. For this we have a whole range of food products that are naturally characterized by these colors. When skillfully cooked, they gain not only greater color depth, but also a lot of flavor. Looking for the perfect snack for the game, I decided to prepare hummus in two flavors and colors, based on baked vegetables – beetroot and carrot. Sounds like a vegan dream, but also satisfies carnivores. It’s relatively easy to prepare, so it’s worth some home production. Soooo, it’s time for a delicious snack!

Maybe some hummus along with the skewer?

INGREDIENTS:

BEET HUMMUS WITH BLACK CUMIN
beetroot – 1 small
chickpeas – 2 handfuls (100g)
lemon juice – 1 tbsp
tahini paste – 1 tsp
black cumin – 1 tbsp
garlic – 2 cloves
parsley – a handful
sesame oil – 2 tbsp
salt
CARROT HUMMUS WITH CHILI & CUMIN
carrot – 3 medium pcs.
chickpeas – 1 cup (approx. 2 handfuls)
tahini paste – 1 tbsp
chili powder – 1 tsp
cumin – 2 pinches
sesame oil – 2 tbsp
cold water – 2-3 tbsp
salt

PREPARATION

1. VEGGIE ROASTING (60 min)

BEETROOMS: Wash beets, cut into large pieces, coat in rapeseed oil and lightly salt.

CARROT: Wash, peel and cut carrots in half. Mix the oil, salt, chili and cumin in a bowl. Put carrots in marinade and coat thoroughly in it.

Spread the prepared vegetables evenly on a baking tray lined with baking paper. Bake at 170 C degrees until tender: garlic in shell for 20 minutes, carrots for 25-30 minutes (must be browned), beets for 60 minutes.

After baking, cool the vegetables and remove the skin from the beetroot.

2. CHICKPEA

It’s best to use a ready-made jar or can, or cook it until soft (soak it in lukewarm water for several hours before cooking).

3. MIXING (10 min)

CARROT HUMMUS
Put the cooled baked carrot, chickpeas drained from the marinade, tahini paste and a little salt in a blender. Blend until the mass is smooth and fluffy – while adding water to obtain the right consistency. Season with more chili and cumin when needed.

BEET HUMMUS
Put the diced beetroot, chickpeas drained from the pickle, tahini paste, freshly ground pepper and a little salt in a blender. Blend until the mass is smooth and fluffy – while adding water to obtain the right consistency.

SERVING

Put both hummus pastes into a bowl, sprinkle the beetroot version with chopped parsley and a large amount of black cumin, sprinkle the carrot version with an additional portion of chili and with a little chopped coriander. Pour a little sesame oil on top of both hummus.

Eat it after cooling in a fridge, with crispy nachos or croutons. Perfect for snack while playing Spyro Reignited Trilogy!
