HOMEMADE PEANUT BUTTER & JELLY SANDWICH
sandwich with homemade peanut butter from roasted nuts and strawberry jam
PREP TIME: 15 min
kitchen robot with blades (food processor)
unsalted peanuts – 350g
salt – 1/2 tsp
fresh or frozen strawberries – 500g
sugar – 2 tbsp
lemon juice – 1 tbsp
toast bread slices
1. ROASTING PEANUTS (5 min)
Put the nuts on a dry and hot pan and roast them on medium heat for a few minutes, stirring occasionally. They must be sligthly browned. Let them cool for a few minutes.
2. GRINDING (5 min)
Put warm (but not hot) toasted nuts on the food processor. Mix them pulsating for about 5 minutes, taking breaks from time to time so as not to overheat the engine. After the first 2-3 minutes, a greasy mass should begin to form. Continue blending until a uniform, creamy consistency is obtained. Add a little salt to taste and mix again.
3. STRAWBERRY JAM (20 min)
If you want to be tempted by a quick version of home-made jam – put fresh or frozen strawberries and sugar in the pot. Heat to boiling and crush the strawberries, e.g. with a potato masher. Cook for about 15 minutes on low heat until the mass thickens. Finally, add a little lemon juice to balance the taste. Cool completely.
4. ASSEMBLY (20 min)
Spread generously with peanut butter and then jam.
Peanut butter and jelly sandwich is perfect not only with the morning coffee! Ash recommends it!
